Lasciare la mancia? Roba d`altri tempi. E poi ora non è più chic. La nuova tendenza che si è affermata nei ristoranti e nei bar della Capitale sembra infatti essersi adeguata alla cultura del Nord Italia, dove il fenomeno non ha mai preso piede come nel resto della penisola. Il risultato? Sui tavoli degli esercizi pubblici capitolini le mance sono sempre più un ricordo lontano. Se secondo il Codacons e la Fipe questa nuova tendenza è dovuta all`euro e ai prezzi sempre più alti, c`è chi invece sottolinea l`affermazione di una cultura differente, figlia di una generazione che rifiuterebbe un simbolo di padronanza nei confronti del personale in servizio. E` netto il sociologo Sabino Acquaviva, secondo il quale questa nuova tendenza “è il risultato di un mutamento culturale“. “La mancia – spiega il sociologo – è espressione di una società fatta di classi subalterne e servili. Oggi anche i camerieri hanno una loro dignità e vengono vissuti con la stesso atteggiamento dai clienti. Il rapporto culturale tra camerieri e clienti è cambiato radicalmente, soprattutto sul piano psicologico. Una volta era quasi obbligatorio lasciare la mancia, mentre le nuove generazioni rifiutano questo gesto che rimanda a un rapporto tra padrone e dipendente“. Come spiega all`ADNKRONOS il critico d`arte ed esperto di bon ton Angelo Bucarelli, “la teoria dice che lasciare la mancia non è chic né elegante. D`altra parte però, se misurata e affettuosa, è anche un riconoscimento al merito: in quel caso diventa un gesto elegante che, se fatto con carineria, è sempre benevolo e gradito. Se è sproporzionato e diventa simbolo di padronanza allora è segno di maleducazione“. La crisi dei consumi sembra però aver giocato un ruolo determinante a sfavore dei camerieri, che se non altro a fine serata riuscivano a far quadrare lo stipendio con gli extra ricevuti durante la giornata. E questo, in tempi di magra, non può che tornare utile. Eppure anche i turisti sembrano aver relegato nel dimenticatoio questa usanza. “I camerieri sono le prime vittime del dimezzamento del valore dell`euro“, dichiara l`avvocato Carlo Rienzi, presidente del Codacons. “Oggi non si riesce a dare più il 10% di mancia – prosegue – così molti clienti preferiscono non lasciare niente anziché rischiare fare una `figuraccia`. E così si arriva direttamente all`azzeramento, saltando il livello del dimezzamento“. Allo stesso tempo, aggiunge il presidente del Codacons, “chi continua a lasciare le mance si è adeguato al valore dell`euro e quindi lascia mance alte, ma la metà dei clienti non la dà più“. “A questo si aggiunga che per quanto riguarda i turisti provenienti dall`est Europa – prosegue Rienzi – lì non si usano le mance: non è come in Francia, dove la mancia è ritenuta quasi obbligatoria“. Derivante dal francese `manche`, il termine rimanderebbe alla manica che la dama regalava al cavaliere nelle cerimonie cavalleresche.
